Line Cook

Job Summary:          

  • Ensure that every food dish is prepared and served with quality ingredients, consistent with the recipe book.
  • Attend to orders promptly to make sure that food comes out in a timely manner.
  • Responsible for the preparation of any Club One Casino food item (Asian and American line).
  • Execute daily specials in accordance to the recipe book.
  • Restock freezers, counter-tops and lower refrigerator drawers.
  • Maintain an organized and sanitized work area at all times.
  • Communicate with Shift Lead when product/supplies are running low.
  • Complete continuing education or training as directed by management.
  • Any and all other reasonable duties that may be assigned in the future.

Daily routine to include:

  • Be on time for your shift and properly dressed.
  • Replace the sanitizer bucket at the beginning of your shift.  Check and change the sanitizer bucket frequently.
  • Check with your Shift Lead for any special events and special tasks.
  • Confirm that all refrigerator units are working properly @ 40 degrees or below.
  • Ensure that all equipment is working properly.  Notify Facilities Manager and Kitchen Manager of faulty equipment.
  • Make sure all containers are properly stored, rotated and stocked to par levels.
  • Ensure that all portioned items are weighed to specs. Never use an item that is not properly portioned.
  • Prepare items on the prep list.
  • Make sure the line is ready for a line check.  If not ready, notify your Shift Lead for assistance.

At end of shift:

  • Restock and rotate all containers – FIFO (first in, first out).
  • Clean and sanitize your station.
  • Wash all cutting boards.
  • Break down sauté burners and send to dishwasher.
  • Clean deep fryers daily and change the oil every Sunday, Wednesday and Friday.

Essential Job Skills:

  • Fluency in English.  Second language skills a plus.
  • Ability to cook all forms of appetizers, entrées, desserts and other menu items.
  • Knowledge of kitchen health and safety practices.
  • Ability to work standing in a confined space for extended periods of time.
  • Ability to lift 20 pounds.
  • Ability to interact professionally with all Club One Casino staff.

Minimum Requirements:

  • Must be at least 21 years of age.
  • Card Room work permit.
  • High school diploma or equivalent.
  • 2 years cooking or kitchen experience.
  • California Food Handler Card.
